I wouldn't say I'm a novice skier but I'm certainly not a veteran but as far as all the various types of equipment I'm still a bit shakey. I have skied with NNN bindings for 2 years and then at the end of this previous season I made the switch to SNS bindings. I currently have Profil bindings and i have skied on pilot bindings a couple dozen times, but i felt almost no difference. Am I missing some important thing between the two/is there any advantages or disadvantages of the two types of binding?

There two differences in my (opinionated) opinion.
The first is that modern (pilot) boots work with both pilot and profil bindings, but old (profil) boots only work with profil bindings.
The second is that people with pilot boots spend a lot of time digging snow and ice out of the space between the bars.
I can't feel a helpful difference between them when skiing. The big advantage of pilot boots/bindings in North America is that 90% of the people around you are on pilot and swapping skis for wax testing is much easier.
I switched to NNN to get more comfortable boots and find that I get a tiny bit more edge control, but not enough to justify switching brands for.
I know people who say they can't skate on profil bindings, so opinions vary on this topic.

For classic I would agree that there is almost no difference between the two. In fact i believe they don't even make classic pilot bindings anymore and have just gone back to the profil. However, if you are skating there is a very noticeable difference. The two bars of the pilot binding give you significantly more control over the ski. Sorry if you were talking about classic and I am just wasting your time, but since you didn't specify i figured i could share my thoughts on the subject.

I also don't notice much difference in classic or skating (except skate roller-skiing, then it makes a big difference). In having this discussion a number of times in past, my sense is that people with bigger feet notice more of the advantages of Pilot system, while experienced, good-hearted smaller feet skiers typically don't. (Which all makes sense from a physics POV, as bigger feet translates to longer lever arm to the front bar.)
